Second sorting Biscotto floor!

These Biscotto stones are not a perfectly carved stone, and have small flaws. Non of the flaws should affect the cooking of the pizzas. Some might need to be sanded with a sandpaper.

The Biscotto pizza stone from Naples, has a diameter of 15 3/4 inches  (40 cm), and a thickness of approximately 1.5 inch. (4 cm).

This one has a small flaw, but it will not affect the cooking of pizza’s.

The Biscotto stone enables high-temperature pizza frying on Kamado-type grills or other BBQ grills with a diameter larger then 16 inches, and where there is otherwise a problem with scorched pizza base on "normal" pizza stone with high thermal conductivity. This stone is produced in a small village outside Naples called Casapulla according to old traditional methods that stretch back several hundred years.

The rock is porous thanks to the volcanic clay mixed with volcanic ash. This in turn leads to very low thermal conductivity and a moisture absorbing property and hence perfect pizza every time.

Biscotto stones from this village are used for professional pizza ovens around the world.

Before use: Please read the instructions on this page:
