This is a game changer when it comes to making pizza on your gas grill!
By capturing the heat in the heat shield, which is produced in stainless steel in combination with baking on the included biscotto floor, you achieve reducing cooking times down to 90 sec. and floor temperature of over 750 degrees Fahrenheit (400 degrees celsius) even if the grill otherwise holds 250-300 gr.
The biscotto floor is produced according to old traditional methods in Naples from local clay from the Gulf of Naples and pozzolana which is volcanic ash. The mixture is dried in molds and fired at high temperatures. The properties of the finished product mean that the floor does not burn the pizza even at temperatures up to 450-500 degrees. Biscotto is recognized as the best flooring material for Neapolitan pizza and is used today by pizzerias in Naples and the rest of the world with respect for traditional Neapolitan pizza.
PS: They are not mounted temperature gauge in our heat shields. We recommend laser ir temperature gauge that can measure the temperature directly on the floor surface.

Due to the fragile nature of the stone, we do not offer any guarantee on the stones. This is standard industry practice. If your stove comes with a broken or cracked stone, you must contact us immediately, and we will replace it.
